Ingredients

2 cups finely diced celery
3 tablespoons extra-virgin olive oil
2 tablespoons minced fresh cilantro
2 teaspoons Sherry wine vinegar

Preparation

  1. Combine all ingredients in medium bowl. Season relish with salt and pepper. Let stand at least 30 minutes. (Can be made 6 hours ahead. Cover and chill.)
