Ingredients

1 large papaya (Mexican or Solo, about 1 pound), peeled, halved lengthwise, seeds removed, cut into 1/2-inch dice
1 cup ice cubes
2/3 cup plain low-fat yogurt
1 tablespoon finely chopped peeled fresh ginger
1 tablespoon honey
Juice of 2 lemons
16 fresh mint leaves, plus 4 sprigs for garnish

Preparation

  1. Step 1

    Puree first 6 ingredients in a blender. Thin with water as necessary. Blend in mint leaves. Divide among four glasses. Garnish with mint sprigs; serve.
