Southern Shrimp Salad

Ingredients

2 tablespoons (more or less to taste) Old Bay Shrimp Boil
2 pounds shrimp, cleaned, peeled, and deveined
1 cup uncooked white rice
1/2 cup chopped onion
1/2 cup chopped green olives
Pepper to taste
1 cup mayonnaise

Preparation

  1. Dissolve shrimp boil in 4 cups water and bring to a boil. Add shrimp and boil 4 minutes; drain, reserving shrimp boil water. Chop shrimp into bite-size chunks and put on paper towels; set aside to cool. In the reserved water, boil rice until tender for 15 to 20 minutes; drain rice in colander. Let cool. Add onion, olives, and pepper to rice; stir in mayonnaise. Add cooled, dry shrimp last.
