Spinach-Pineapple-Mint Juice

The mint in this juice ties together the sweet pineapple and tart green apple so well that you won't even notice the spinach.

    Makes 16 ounces

Ingredients

1/2 lemon
3 cups spinach
2 Granny Smith apples, sliced
2 cups cubed pineapple
8 mint leaves

Preparation

  1. Juice the lemon using a manual citrus juicer. Juice the remaining ingredients in a juicer, and then combine with the lemon juice. Store in an airtight glass container in the refrigerator for up to 24 hours.
