Sugar Snap Peas

Ingredients

1/2 cup chopped peeled fresh peaches
1 tablespoon cider vinegar
1 tablespoon chopped yellow onion
1 tablespoon golden raisins
1/2 teaspoon grated peeled fresh ginger
1 teaspoon cane syrup
1/2 teaspoon grated lemon zest
1 garlic clove, minced
1/4 teaspoon mustard seeds
1/8 teaspoon red pepper flakes
Pinch of ground cinnamon
Pinch of ground cloves
Pinch of ground allspice
4 cups sugar snap peas (1 pound), trimmed

Preparation

  1. Combine the peaches, vinegar, onion, raisins, ginger, cane syrup, lemon zest, garlic, mustard seeds, red pepper flakes, cinnamon, cloves, and allspice in a large bowl. Cover and microwave on high for 1 minute. Add the peas, cover, and cook on high for 2 minutes or until the peas are tender.
