Breading

Cooks' Note

Breaded objects reheated in a microwave oven become soggy. Reheat such things in a regular oven, please.

Preparation

  1. Falls off

    Step 1

This time, unless it came off in big replaceable slices, cover the whole works with a nontransparent sauce.

    Step 2

Next time, follow this six-step procedure: Dry the object to be breaded. Dip it in flour and shake off the excess, so there is only a thin coating. Dip it in a mixture of an egg and a few drops of oil beaten well together. Drop onto fine crumbs, to coat with a thin layer. Spoon crumbs onto any bare spots and pat them on. Put on waxed paper in the refrigerator for 30 to 60 minutes. Cook per the recipe.
